5-minute quesadillas

Do you ever come home from work, or school, or whatever it is you do and need to eat like right then?  Dinner is suddenly an emergency.  If you are anything like me, you speed dial the closest Chinese restaurant and head right back out the door. Well, this recently happened while I was on the phone with my mom.  Before I could hang up to call Jade Garden, she recommended an alternative plan.  

Quesadillas.  Just as delicious as beef and broccoli, but cheaper and faster and more nutritious? Why do you still know everything, Mom? 

These are quick, yummy, and filling.  Ever since Mom suggested these, I just keep the the ingredients on hand and we eat these a couple days a month.  Plus, leftovers are pretty great the next day for lunch.

strawberry french toast

Good Morning! Hope you had a good weekend! I spent it running errands, attending the cutest baby shower, watching the U.S. of A. with Jason, and spending some serious time soaking up sun.

I also stuffed my face with this... Is there anything better than a lazy breakfast? No. Our apartment overlooks a little lake and I have to be honest, eating breakfast out there is kind of a happily ever after moment.  Every time.  I know.  I'm pitiful, but it's true. 

Moving on... The real key to good French toast is patience.  You have to wait for your bread to get a little bit stale.  Then, you have to wait for the egg mixture to set. Lastly,  you have to wait for the bread to soak up the mixture. But, oh is it worth the wait. I like to sprinkle my toast with confectioners sugar and sliced strawberries. Berries are just always a good idea.

chipotle honey chicken with mango salsa

Hola!  Happy August to you.  That last lazy month of summer... I hope you are knee deep in sun screen, a DVR Olympic marathon, or a good novel... and if you are, just keep doing what you are doing.  Stretch out those last few moments.  Really savor them. 

And while you are at it, eat this... 

This recipe will knock your socks off. Chipotle, honey, and garlic blend to create a saucy little marinade.  Let your chicken soak all that deliciousness in for the next couple of hours.  Light your grill and then top it all off with twangy mango salsa. An easy, delicious end of summer meal. We had it with with corn on the cob and sweet potato french fries
