toasted coconut-lime cupcakes with coconut clotted cream

I'm just not quite ready for fall... While I love fall, I think I'm in love with summer.  Swoony, woozy, honeymoon in love.  I love digging my toes deep into white sand and wearing oversized sunglasses.  I like soaking up sunshine, grilling dinner, spotting little kids covered in freckles, and running around in airy sun dresses. I like leaving work and finding the outside world still sunny and bright. 

Fall is great, but a part of me is still clinging to summer. I'll be sad to see it slip away. I feel like it already is... Yesterday, I awoke to a crisp 67 degrees.  

Since, mom and I are the same person (basically), she was feeling the same end o' summer blues. So, we whipped these up at the beach house. Toasted coconut-lime cupcakes topped with coconut clotted cream.  Oh. My. Gosh. It kind of tastes like a margarita. A really delicious, Paleo, cupcake meets scone kind of margarita. I preceded to eat four as soon as I'd smothered their tops in cool, creamy clotted cream.

oreo ice cream cupcakes

Happy Friday!  Today, the love of my life turns 26.  Happy Birthday, Jason Kneisler!  I am so grateful to be with such an incredible, loving, godly man.  I love him, a lot.

Coming up with a dessert for this guy was a bit of a challenge.  He is a white cake with white icing, vanilla ice cream kind of a guy.  Which is fine, except I wanted his birthday to be perfect.  I researched for a few days, ran a few things by him... nothing. My sister, Emily, had this great idea.  Oreos. Jason loves oreoes.

Chocolate cupcakes stuffed with cookies and cream ice cream.  Topped with vanilla frosting and an Oreo of course. BAM!  Em is a genius and something of a cupcake specialist. She helped me whip these up for family night this week.  Jason loved them.

apple cupcakes with caramel frosting

Happy Halloween!!!  Halloween is one of my favorite holidays... Costumes, candy, pumpkins, and parties... Our weekend was filled with costume parties, haunted hayrides, apple cider, scary movies, and a spooky corn maze.

On Friday night, Jason and I were Sick & Tired.  Jason did a great job acting and looking completely miserable and I just curled up on the coach during the party. Best last minute costume ever. Well, maybe posting pictures of fake throw-up on your foodie blog isn't the best idea, but there you have it. 

Here are some pretty apples to get your mind off it. Anyways, costume parties means lots of goodies and these apple cupcakes are sure to be a hit at any halloween event.  I made these for my little sissy's pumpkin carving party last weekend.
