Sometimes, really healthy things aren't a chore. For example, running may stink the first couple weeks but after that it kind of becomes therapy, at least for me. Hitting the pavement just shuts off all the noise and clears my head. Dark chocolate tastes amazing, and it is good for your heart, brain, and even hardens your enamel. (Who knew, right?) And of course, this salad right here. The greens and berries help flush toxins out, but this dish is definitely not hard to eat. While I'm not on a detox diet right now because I'm nursing, I do like tossing a few recipes like this into my meal plans just to keep things healthy. (And if you are following a really strict detox, leave out the feta.)
This salad may look and taste a little on the decadent side, but don't be fooled. In spite of the killer combo of berries and feta (so good!), it is dense with nutrients. Chard, kale, and spinach add tons of fiber, vitamin A, vitamin C, folic acid, and iron. Strawberries and blueberries bring even more vitamin C to the table and add a faint sweetness to the dish. A touch of feta and a little grilled chicken bring in the protein and calcium. Drizzle with your favorite low fat dressing and you are in business.

1/2 cup baby kale
1/2 cup chard
1/2 cup baby spinach
1/4 cup carrots, shredded
1/4 cup strawberries, sliced
1/4 cup blueberries
1/2 cup grilled chicken, shredded
1/4 cup feta (optional)
Prep Time: 5 minutes
Yields: 1 serving
Place greens on a dinner plate and blend. Top with remaining ingredients and toss. Serve with your favorite salad dressing!
