So, I spend about 10 hours a day alone with a baby, a puppy, and my own wandering thoughts... Let's just say things are getting a little random.
First, I really love the back patio in Parenthood. Old tables, light strung up all over the place, and mismatched chairs neatly surrounded by little stone walls. I want that backyard! I realized that, while I really love the show, I secretly stream this show again and again for decorating ideas. Also, this is my new favorite board on Pinterest. Obsessed.
Second, is it just me or is there an increase in mopeds in the berbs? They are taking over the streets! Every time I have left my house this week, I've been stuck behind a moped... I guess I could see a moped being useful in a big city, but it seems a little off in Virginia suburbs.
Lastly, baby anything is basically the best. Obviously, Noah is the best thing ever, but I'm noticing a pattern. Adult tigers? Terrifying. Majestic. Hungry. Baby Tigers? They're so FLUFFY! M&Ms? Awesome. Mini M&Ms? Awesome and adorable!! (Plus, they come in that handy little container.) Kale? Nutrient dense. Superfood. Vitamin A. Baby kale? All the nutrition without the gritty, earthy taste. Don't even get me started on baby spinach...
Baby greens are a game changer. Kale can be pretty hard to choke down at times, but baby kale is really a whole different story. Soft, crisp, and fresh, it absolutely doesn't have that I-still-taste-like-soil flavor some kale still possesses (no matter how many times you wash it). Baby spinach tastes like full grown spinach, but the leaves are bite-sized and way more manageable. Plus, the texture is super tender. It is perfect for tossing on sandwiches, making quick salads, and blending into smoothies. It takes this wrap from an okay lunch to an incredibly healthy lunch without diminishing the flavor. Spicy mustard, honey honey and fresh, tasty greens are all neatly wrapped in a GF tortilla. It's quick, delicious, and a nice way to spice up a lunch box.
Honey Ham Wrap with Baby Greens

2 gluten-free tortillas (Here and here are two great brands! This isn't a sponsored post... I just like these products.)
1/4 cup baby kale
1/4 cup chard
1/4 cup baby spinach
2 baby carrots, shredded
1/4 pound thinly sliced deli honey ham
2 tablespoons spicy mustard
Prep Time: 5 minutes
Yields: 2 servings
Lay tortilla on a flat surface. Spread mustard on tortilla. Top with greens, carrots, and ham. Roll and cut wrap in half.
