Breakfast with Udi's

Things have been pretty breakfast-y on the blog lately.  Breakfast is my favorite meal and toward the end of my pregnancy, it's really all I wanted.  So, when Udi's Gluten Free approached me about reviewing a few products from their new breakfast line, I jumped at the chance.  A huge box of Udi's goodness arrived.  There really wasn't anything in there Jason and I disliked, but I thought I would share my very favorite products with you.  (This is a sponsored post but the opinions and recipes are 100% my own.) 

Yogurt Parfait with Blueberry Cashew Granola Clusters 

I'm pretty picky about store bought granola, but I really loved this one.  Packed with cashews, dried blueberries, and oats, this granola is full of healthy stuff and it has a great, crunch to it.  It also has 25% of the Zinc you need daily. I paired it with low fat, vanilla Greek yogurt for breakfast one morning and was in heaven. Plus, it only took a few minutes to throw together. 

Everything Inside Bagels with Avocado Cream

These bagels are amazing.  It's been ages since I've had an everything bagel beacause I've never seen a GF option, so this was the first thing I tried out of the whole box.  As it toasted, my little kitchen filled with a warm, savory aroma.  These bagels are made with millet, flax, poppy seeds, garlic, onion, and sea salt. Seeds and spices are crusted on the top and scattered throughout the center, making the whole bagel crunchy and flavorful.  (Everything Inside Bagels is an aptly coined name.)  And, the texture is both chewy and crunchy like every bagel should be. Instead of cream cheese, I whipped up a quick avocado cream with cumin, lime, sea salt, and a dash of chili powder.  Delicious!


Cinnamon Orange Baked French Toast

Udi's included a loaf of Cinnamon Raisin bread and I knew exactly what to do with it. Baked French Toast is one of my favorite breakfasts and it is just so easy.  Even with a new baby, I spent about ten minutes whipping it up on Saturday so that on our first Sunday home from the hospital we could have a big breakfast.  The bread is lined with giant raisins and cinnamon swirls and was begging to be paired with a hint of orange.  It came out of the oven on Sunday in thick, fluffy cubes of French toast deliciousness topped with a butter-y, crumb topping. So very good. 

Breakfast Quesadillas

These gluten free flour tortillas are pretty amazing.  Soft and thin, they are perfect for all sorts of yummy Mexican meals or quick wraps. Udi's sent me small and large tortillas and, wanting to stick to the breakfast theme, I used the small tortillas to make some quick breakfast quesadillas. Scrambled eggs, sharp cheddar, and diced tomatoes make a yummy, hearty filling.  I topped the toasted tortillas with diced tomatoes and avocados. Good and fast, these quesadillas make any morning brighter.

1 cup low fat vanilla Greek yogurt
1/2 cup Udi's Blueberry Cashew Granola Clusters

Prep Time: 5 Minutes
Yields: 1 serving


Layer yogurt and granola in a small dish.  Enjoy! 

Everything Inside Bagels with Avocado Cream

1 Udi's Everything Inside Bagel, toasted
1/2 avocado
1/2 teaspoon sea salt
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 Mrs Dash's Fiesta Lime Seasoning
2 teaspoons lime juice 

Prep Time: 5 minutes
Yields: 1 serving


1. In a small bowl, mash avocado with a fork.  Stir in spices and lime juice.  

2. Spread avocado cream on toasted bagel. Enjoy!

Cinnamon Orange Baked French Toast


Butter, to grease pan
8 slices Udi's Cinnamon Raisin Bread, slightly stale
4 eggs
1 cup milk
1/4 cup orange juice
1/3 cup light brown sugar, packed
1 teaspoon vanilla extract
1 teaspoon cinnamon

1/4 cup gluten-free flour
1/3 cup light brown sugar, firmly packed
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
A pinch of sea salt
3/4 stick cold butter, cut into pieces

Prep Time: 15 minutes
Cook Time: 45-55 minutes
Yields: 4 servings


1. Grease pan.  Tear or cut bread into bite-sized pieces and place in buttered dish. Set aside. 

2. In a small bowl, whisk eggs, milk, orange juice, brown sugar, vanilla and cinnamon together until smooth.  Pour mixture over bread. If you are prepping dish in advance, cover and refrigerate overnight. 

3. In a separate bowl, mix flour, sugar, and spices. Cut butter into dry mixture with a pastry knife until topping resembles fine pebbles.  If you are making the dish ahead of time, place in a Ziploc and toss in the fridge. 

4. Preheat oven to 350F. Cover dish with topping. Cook for 45-55 minutes. (45 for softer toast and 55 for crisper toast.) Serve with butter and warm maple syrup. Enjoy!

Breakfast Quesadillas

4 Udi's Small Tortillas
4 eggs, scrambled
1/2 cup sharp cheddar, shredded
1 Roma tomato, diced
1/2 avocado, diced

Prep Time: 10 minutes
Cook Time: 5 minutes
Yields: 2 servings


1.  Grease a small frying pan and place over medium heat. Once warm, place two tortillas in pan.  Layer eggs, cheese, and tomatoes on top.  Cover with remaining tortillas. 

2. Cook for 3 minutes on each side or until tortillas are golden brown and cheese in melted. 

3. Garnish with remaining tomatoes and avocados. Enjoy!
