8-minute breakfast sandwich

If you have been around A Sweet Simple Lifefor any amount of time, you'll know I'm really into easy.  After work, I am exhausted and the last thing I want to do is slave in the kitchen when I get home. And that was the case before I was pregnant... Now that I'm a billion months preggo, it's a billion times worse.  Even breakfast... my favorite meal... seems like too much work.

So, needless to say, I'm digging this sandwich right now.  Remember those gluten-free wafflesI made a few weeks ago? I froze the leftovers and we used them for such breakfast-y goodness as is pictured below. Sharp cheddar, a fried egg, and crisp butter-y waffles. Yum.  It keeps things gf and really easy.  You almost don't even need a recipe for this...

8-Minute Breakfast Sandwich

Ingredients:

Prep Time: 3 minutes

Cook Time: 5 minutes

Yields: 2 sandwiches

Method:

1. Break frozen waffle into fourths and toast in toaster oven for 5 minutes or until defrosted and crisp. 

2. Cook eggs to your taste.  In the last minute of cooking, place a slice of cheese on top and let it melt. Salt and pepper eggs to taste.

3. Assemble sandwich and enjoy!
