weeknight wonders: tequila-lime chicken fajitas

Summer is never subtle in Virginia.  One minute it's a cold, rainy sweater-wearing-kind-of-day and the next morning you're greeted with blue skies and muggy, sunshine-y air.  Summer strikes fast and with it flip-flops, sunscreen, beach days, and dinner on the patio.  

These fajitas would be the perfect meal to serve on the back deck.  Chicken is marinated in orange juice and tequila with a touch of lime and then quickly sauteed with peppers and onions.  Served on warm tortillas with a touch of sour cream and fresh cilantro.  They go great with iced tea, guacamole & chips, and tiki lights by the pool.  

The best part?  This meal comes together in about 30 minutes flat.  Make these this week and kick off your summer right. 

Tequila-Lime Chicken Fajitas

2 pounds chicken breast, cut into 1/2 inch strips
1 cup orange juice
2 tablespoons lime juice
2 tablespoons tequila 
2 cloves garlic, minced
3 tablespoons chives, chopped
2 tablespoons Mrs. Dash Fiesta Lime Seasoning or your favorite taco seasoning
2 teaspoons sea salt
1 yellow bell pepper, sliced
1 orange bell pepper, sliced
2 medium purple onion, coarsely chopped

For serving: 
Fresh cilantro
Light sour cream
12 corn tortillas (make sure they are GF) 

Prep Time: 10 minutes
Cook Time: 15 minutes
Yields: 4 servings


1. For marinade, whisk together orange juice, lime, tequila, garlic, chives, and spices together in a small bowl.  Place chicken in a shallow glass dish with a lid.  Pour marinade over it and refrigerate for 8 hours or overnight. 

2.  Lightly grease a large skillet and heat over a medium-high heat.  Sauté chicken and about 1/2 cup of marinade until chicken is well done, about ten minutes.  Add peppers and onions and cook until veggies are soft, about 5 minutes. 

3. Warm tortillas in the microwave for 30 seconds.  Serve with cilantro and sour cream.
