oatmeal pancakes

Hi there! Remember me? Heather? Sorry I went MIA on you and I don't really even have an excuse. I needed to regroup, retreat, rethink some things, but I'm here to make up for it though. We can still be friends... I'll do better, I promise. And nothing says "Gosh, sorry about that..." like pancakes. Especially, gluten free pancakes.

This pancake batter is gluten free, dairy free and takes about 5 minutes to whip up. Plus these don't require any special flours... just a few handfuls of oats and almonds. Can you say "GLORY!!"? So make a pot of coffee, heat up some real maple syrup, and make some brinner. (Breakfast married dinner...) You get it.

Oatmeal Pancakes

Ingredients:
2 cups gf oats
1/2 cup almonds
2 eggs
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 1/4 cups coconut milk
1 teaspoon vanilla extract
2 teaspoons baking powder
1 tablespoon raw sugar (optional... I didn't use any, but cakes will have a faint sweetness if you do :)
Prep Time: 5 minutes
Cook Time: About 6 minutes per cake
Yields: 4-6 Pancakes
Method:
1. Heat non-stick frying pan over a medium-high heat. Place all ingredients in blender or food processor and blend until smooth.
2. Pour batter in a bowl and grease frying pan. Spoon 1/2 cup of batter onto pan and let cook for 3 minutes on each side.
3. Serve warm with butter (or ghee) and warm maple syrup (or maple agave nectar).

Even though I make mine with Wholewheat flour in addition to oats and flax seeds,I've been looking for a Gluten Free Pancake recipe.This looks lovely ! I'm definitely gonna try this and will be coming back for more !
Holy socks these are delicious! I recently made the GF switch myself and have really had a hard time getting used to the extra "work" of using various other flours...but oatmeal - now that's something I have on hand all the time! I did sub regular milk (I'm not dairy free), and there may have been a couple of pecans in with my almonds (I had a bag of frozen almonds and pecans in the freezer from making spiced nuts at Christmas), but I generally followed the recipe and they were so great! I didn't even use syrup! ;-)
So this is now my go-to pancake "mix"! Dont you feel lucky! LOL!

I made these this morning with quick oats, whole milk, sesame seeds (sounds weird, but I didn't have almonds) and...ok, a zillion other modifications. Soy flour instead of eggs, no vanilla, 2 T sugar, added 1/2 t baking soda and 2 t baking powder to help 'em rise. Turned out awesomely. Thank you!
This recipe is great! I've been craving pancakes but wanted a healthy alternative to the box mixes. I made a few alterations to suit my own tastes but they were awesome and SO filling! I didn't have baking powder so I used 1/2 tsp baking soda. i also used 2 tbsp grade b maple syrup instead of sugar. I also doubled the amount of cinnamon and nutmeg and added ginger. My husband loved them as well and I'm thinking of freezing the leftovers to pop in the toaster in the morning. With the maple syrup cooked in, you really don't need to add syrup (but I did tonight because I have such a sweet tooth!). Thanks again!!
