chipotle rubbed texas brisket

Some recipes will get you married. This is one of those recipes.  If this doesn't bring him to his knees, not much will. Serve this Sunday afternoon during the game and he will probably propose.  Tender meat seasoned with a spicy chipotle rub and smothered in barbecue sauce. This is my mom's recipe and trust me... She could butter up the toughest soul. The fastest way to a man's heart is barbecue. 

And this ain't no Carolina barbecue, it's Texas barbecue.  Which means sweet, smoky beef that is just falling apart. Glory. Slap it betwixt two buns and there is just nothing left to say. 

Plus, you can make this is the old crockity pot.  20 minutes prep and you are well on your way to a proposal, or a very happy husband in my case. :)  Do it and have a great weekend! 

Chipotle Rubbed Texas Brisket

Ingredients: 
1 large purple onion
3 1/2 pound first-cut beef brisket
2 tablespoons paprika
2 minced chipotle peppers (canned)
1 teaspoon cumin
1/4 cup light brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons apple cider vinegar
2 cups of your favorite barbecue sauce
Hamburger buns (We used Udi's GF)

Prep: 20 minutes
Cook Time: 6-8 Hours on LOW
Serves: 8-10 servings

Method: 

1. Dice onion and place in the bottom of the crock pot.  Put brisket on top. 

2. Mix peppers, spices, sugar, Worcestershire, and vinegar together.  Rub on meat.  Cover crock pot and cook on low for 4 hours. 

3. About four hours in, pour barbeque sauce on meat.  Cook for 2-4 more hours or until meat shreads easily with a fork. Remove from heat and shread for sandwiches. 

4.  Place on bun, add a little bbq sauce, and dig in!

So my wife found this recipe and I was wondering about an inconsistency I noticed with it. In the instructions portion you mention vinegar but in the ingredients portion there is no mention of it. Is it supposed to be apple cider vinegar or just apple cider

@Jake - Thanks so much for pointing that out! Yes, that is apple cider vinegar. Sorry about the typo!
