brown butter steak with blue cheese gravy

Say hello to your new favorite dinner.  Sometimes, you just need a steak. I love this recipe cause it's made in a grill pan... Perfect for little apartment dwellers like me.

And this particular steak is grilled in brown butter and then smothered in blue cheese gravy.  Mushrooms and onions add a rustic flavor.  Pair with a glass of chardonnay, some steamed veggies, and garlic mashed potatoes and you are in for a pretty fancy meal. I made this for Jason on our second date and I'm pretty sure it helped seal the deal if you know what I mean... I like to make it every now and again. It's not the healthiest meal, but every once in a while this decadent dish is completely appropriate. 

Brown Butter Steak with Blue Cheese Gravy
Adapted from The Pioneer Woman 

Ingredients:
2 16 oz New York Strips
3 tablespoons butter
Salt and pepper
4 tablespoons butter
1 small red onion, sliced
1/2 cup mushrooms, sliced
1 cup heavy cream
3/4 cup blue cheese, crumbled

Method: 

1. Salt and pepper steaks and set aside. In a grill pan, melt butter stirring frequently.  Butter will begin to foam and brown specks will form.  Toss steaks in pan and cook to taste. 

2. in the meantime, melt 4 tablespoons of butter in a medium sized pan.  Sauté onions and mushrooms until onions caramelize... about 5 minutes.  Add cream and cook until reduced by half, about 3 minutes. Remove from heat and add blue cheese. 

3. Plate dish by placing gravy on a dish and the steak on top.  Serve with your favorite vegetable and a glass of wine. Enjoy!
