pomegranate granita

This elegant granita allows all three. Shaved ice topped with chilled pomegranate seeds creates a refreshing, light treat.   Sweetened with just a touch of agave nectar, it is also gulit-free.  So drool, crave, and diet to your heart's content!  

Pomegranate Granita

Ingredients: 
2 cups pomegranate juice
1 tablespoon lemon juice
1/4 light agave nectaar
1/4 cup fresh pomegranate seeds

Prep Time: 5 minutes
Freeze Time: 3 hours
Yields: 6 servings

Method: 

1. Whisk pomegranate juice, lemon juice, and agave nectar together.  Pour into a glass pie dish and freeze for 3 hours or overnight. 

2. When mixture is frozen, scrape ice with a fork and place in serving bowls.  Sprinkle each dish with pomegranate seeds and serve immediately. 

Hailing from one of my favorite cookbooks, this dessert turns out simply beautiful with hardly anytime spent in the kitchen.  The possibilities are really endless.... Whip it up for a wedding shower,  a nice ending to a romantic dinner, or girls' night.
