ricotta & pear toast

How did I cope with a hurricane slamming my sleepy, late summer weekend?  Well, since we never lost power, I brewed some french press, slid some bread in the toaster, and sliced a few pears.  Then, I guiltily enjoyed each creamy, sticky, crunchy mouthful of my breakfast while watching Irene rage outdoors.

Ricotta & Pear Toast

Ingredients: 
2 slices toast (I used Udi's Gluten-Free bread, but a crusty french loaf would be delicious too!)
2 tablespoons ricotta cheese
1 ripe pear 
1 tablespoon honey

Prep Time: 5 minutes
Yields: 2 Servings

First, while your bread is toasting, cut up your pear into thin, delicious slices. 

Smother your toast in ricotta. Yum. Yum. Yum. 

Assemble your pears and then drizzle your creation with a bit of honey. Eat in your pajamas with an enormous cup of dark, caramely coffee.
