cranberry-almond granola
As exciting as it is to think that I will be in my own little home in just 133 days, it will be sad to leave home. I love mornings at home. Both Mom and I are early risers and it is one of the few times I get her all to myself. Around 6:15 am, you'll typically find us chatting on the couch over coffee.
This granola is a staple in our house, and trust me, it will back morning your favorite time of day too. I love the texture of Mom's granola. It packs a nice little cereal crunch, unlike many chewier recipes we've tried.
Cranberry-Almond Granola
Ingredients:
3 cups of oats
1/2 cup of sliced almonds
1/2 cup of sunflower seeds
2 tablespoons ground flax seed
pinch of salt
1 tablespoon cinnamon
1/2 cup canola oil
1/2 cup maple syrup
2 cups dried cranberries
Prep Time: 10 minutes
Yields: 12 servings
Preheat oven to 300. Mix oats, almonds, sunflower seeds, flax seed, cinnamon, and salt together. Slowly add canola oil and maple syrup until your mixture is a delightful, sticky mess.
Spread your granola thinly across a cookie sheet. Brown in oven for 20 minutes. Let your mouth water as the maple, cinnamon aroma fills your kitchen. When the oats are a nice golden color, remove from the oven and add cranberries. Let granola cool completely and store in an airtight container. Mom likes to eat hers with plain yogurt and I prefer mine in a tea cup with a tinsy bit of milk.
Mix it up. Substitute blueberries for the cranberries or go crazy and buy the Trader Joe's Dried Orange Flavored Cranberries. Also, to make this recipe gluten free simply use gf oats.

Thank you for sharing this yummy looking granola recipe! How sweet to be thinking of the special time you will miss with your mother. You are definately approaching a whole different phase of your life. You can always go spend the night with your mom and still have those moments. Or run over early on a Sat morning, keep doing that special thing that has always meant so much to you. I have to admit dirt in my breakfast nook wasn't making me feel too happy, but then the Morning Glories started climbing and well it made it all worthwhile. There is just something so beautiful about how they find anything to cling to... Good job girlie, I like this domestic side of you!!
