christmas crinkles

One of my favorite parts of the holiday season is Starbucks' mochas.  I love the fallish salted caramel mochas AND I love christmasy peppermint mochas.  In fact, I don't really know which one I love more. While the rest of the year I am a grande, nonfat latte girl, starting in early November I alternate my two fav mochas. 

Why not turn this obsession into a recipe?  But instead of cupcakes, cookies. Basic chocolate crinkles two ways: salted caramel crinkles and peppermint double chocolate crinkles.  Say hello to the holidays. 

Christmas Crinkles

Ingredients:
1 2/3 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter
1 1/4 cup sugar 
2 large eggs
1/2 teaspoon vanilla
2 candy canes
1/2 cup white chocolate chips
1/2 cups caramel bits
1/2 powdered sugar
Sea salt

Prep Time: 20 minutes
Cook Time: 12 minutes per batch
Yields: 36 cookies

Preheat oven to 350 F.  Mix dry ingredients in a small bowl.  Set aside. 

Using a mixer on medium speed, cream butter and sugar.  Stir in eggs and vanilla.  Switch to a low speed and add flour mixture 1/2 cup at a time.  Mix until well-blended.

Yum!!  Break into carols cause Christmas time is finally here and you are making cookies!!!! 

Crush candy canes with a food processor, sandwich bag and meat cleaver, or a mortar and pestle. 

 

Divide dough in half and mix in candy canes and white chocolate chips. 

Now, the caramel bits.  A little bit of a fiasco in the Apple Cider Ice Cream, but brilliant in this batch of cookies. 

Mix bits in other half of the dough. 

Scoop a teaspoon of dough.  Roll into a ball and douse with powder sugar. Place 2 inches apart on a greased cookie sheet. 

Bake for 12 minutes. For the salted caramel crinkles, remove cookies from oven after 7 minutes and salt each cookie lightly.

Turn on some Christmas music.  (I'm loving A Very She & Him Christmas.) Then, pour a cup of coffee and dive into a plate of Christmas crinkles.
