maple glazed vegetables

It's almost Thanksgiving!!!  Only two more days!!!  

I love Thanksgiving.  It's any foodie's dream holiday.  A holiday with the focus on FOOD.  Well, this is one of my favorite holiday sides.  Roasted in a cast iron pan, these maple glazed vegetables take only a few minutes to prepare and they add a bit of color to your Thanksgiving Feast. 

Maple Glazed Vegetables

Ingredients:
2 Granny Smith apples
1 acorn squash
1 small purple onion
1/4 cup brown sugar
1/2 cup olive oil
Cracked black pepper
1/4 cup maple agave necter or maple syrup
Fresh sage leaves

Prep Time: 15 minutes
Cook Time: 30 minutes
Yields: 4 servings

Preheat oven to 350. Slice your veggies.  Cut apples and onion into eighths.  Then, slice acorn squash into 1 inch pieces. Remove seeds and cut slices in half. 

Mix olive oil and brown sugar together.  Place vegetables in a cast iron pan and, using a pastry brush, lightly brush veggies with brown sugar mixture. 

Pepper vegetables and roast for 25 minutes. 

Pull veggies out and drizzle with maple agave syrup or with regular maple syrup.  Cook for 5 more minutes. 

Garnish with fresh sage and impress your Thanksgiving guests with a medley of colors already staged in a rustic cast iron pan.

Thank you for your recipes. Made 2 pitchers of Sassy water tonight. Can't wait to drink a glass tomorrow morning when I wake up. I am doing a whole foods plant based diet with no dairy, meat or eggs and I can definitely find substitutions to make your recipes work. Loving your blog!
