easy taco soup

Sometimes, you only have 15 minutes of prep time... especially during the holidays That's when you bust out this taco soup. Scurry around your kitchen for 15 minutes. Do laundry, fight fires, answer emails, wipe noses or, in my case, do a quick work-out video and some online shopping while it simmers, and bam! You've got a delicious, warm meal for your family and you've knocked out a bit of that ever-growing to-do list.
Easy Taco Soup
Ingredients:
1 small purple onion
2 cloves of garlic
1 tablespoon olive oil
1 teaspoon red pepper flakes
1 pound lean ground beef
2 teaspoons cumin
1 teaspoon paprika
1 packet taco seasoning
1 16 oz. can mild Rotel tomatoes
1 16 oz. can diced tomatoes
1 16 oz. can white shoe peg corn
1 16 oz. can black beans
1 16 oz. can pinto beans
3 cups water
Toppings:
Shredded lettuce
Shredded Monterey Jack & Cheddar Cheese
Sour cream
Prep Time: 15 minutes
Cook Time: 30 minutes
Yields: 8 hearty bowls of soup

First, chop garlic and purple onion. Then, heat olive oil in a large stock pot. When oil is piping hot add onions, garlic, and red pepper flakes. Sauté for a few minutes and then add beef, paprika, cumin, and taco seasoning to pot. Don't try to make your own taco seasoning... You've got 15 minutes. Embrace the pre-made taco seasoning and vow to come up with your very own, ingenious taco seasoning this weekend. Cook beef completely.

Add Rotel and diced tomatoes. Say hello to your soup base.

Add drained corn and beans to your soup and 3 cups of water.

Bring to a boil and then reduce heat. Simmer on low for 30 minutes.

Garnish with cheese, lettuce, and a dollop of sour cream. Serve with tortilla chips.
And, those 15 minutes just keep on giving... these leftovers feed Jason and I for a couple days. Refrigerate in an airtight container.

This soup looks awesome! I'd never guess that it only requires 15 minutes of prep time. That's a huge plus on busy evenings . . . which seem to be the norm right now in my life.
