shrimp & grits

Shrimp and grits are a southern classic.  I had my first run-in with the dish in a hotel in New Orleans way back in high school.   As I drank dark coffee, munched my breakfast, and watched plastic beads glitter in the trees outside, I was sure the cheesy grits and savory shrimp captured something lasting about that old town.  I recently re-encountered the dish flipping through an issue of Bon Appétit and determined to take my own angle on the recipe.  So, ladies and gents, Mrs. Kneisler's shrimp and grits...

Shrimp and Grits
4 slices thick bacon
1 tablespoon olive oil
1 clove garlic
2 roma tomatoes, cut into chucks
1 teaspoon dried parsley
1 tablespoon butter
1 pound frozen shrimp (tail off, peeled, & deveined) 
3 cups quick grits
2 cups finely shredded mild cheddar
Salt & pepper

Prep time: 25 minutes
Yields: 4 servings

Step one, preheat oven to 350°F and fry that bacon.  Crumble and set aside.

Heat oil at a medium heat in a small frying pan.  Add garlic and saute for two or three minutes. Add tomatoes and parsley.  Saute for two minutes more to allow tomatoes to absorb flavor. 

Mix shrimp and tomato mixture in a shallow baking pan and bake for 12-15 minutes or until shrimp are completely cooked. 

Meanwhile, toss butter in the pan that you sauteed the tomato in.  Once melted, add grits and toast for a few minutes until grits are golden brown.  This gives the grits a tad more flavor. 

Prepare grits according to the directions on the package.  Remove from heat and add crumbled bacon and cheese.  Stir until cheese is completely melted.  Salt and pepper to taste.

 

Remove shrimp from oven.  Wipe the drool off your chin. 

Top grits with shrimp and tomatoes.  Enjoy this cozy meal outside in the fall air. We ate it for supper, but it would also be a great dish for a weekend brunch.

Ok...I just saw this, and I always thought that sounded gross. BUT, I had a similar version at Christmas and now one of my favorits.
